煎釀三寶食譜 Fried Stuffed Eggplant/Green Pepper/Bean Curd/Sausage
20件份量 20pcs
鯪魚肉 180g Minced Fish
鹽 ½tsp Salt
糖 1½tsp Sugar
雞粉 1tsp Chicken Powder
粟粉 45g Corn Starch
胡椒粉 ½tsp White Pepper
水 100ml Water
蔥 1pcs Spring Onion

茄子 Eggplant
青椒 Green Pepper
豆腐 Bean Curd
紅腸 Sausage

生抽 3tsp Soy Sauce
老抽 1tsp Dark Soy Sauce
糖 2tsp Sugar
水 3tsp Water

1.先把鯪魚肉加糖、鹽、雞粉和胡椒粉,把蔥切粒,加入粟粉和水,向方向攪拌10分鐘,備用
2.把茄子和紅腸斜切,豆腐對切,青椒對切,把籽挖走,用廚房紙巾印乾食物,沾上粟粉後加上鯪魚肉,備用
3.把油預熱,以中火炸熟食物
4.把生抽、老抽、糖和水混合攪拌,倒在食物上,完成
